Tasty Tuesday

We had about a week of cold weather and I like soup when the weather is cold. This is a potato cheese soup that is very easy and very tasty. Slainte!

Potato Cheese Soup
Ingredients
5 potatoes, peeled and cubed
1 small carrot, finely chopped
1/2 stalk celery, finely chopped
1 1/2 cups water
1 teaspoon salt
2 1/2 cups milk (I used 1%)
3 tablespoons margarine, melted
3 tablespoons all-purpose flour
1 1/2 teaspoons steak seasoning (I used Montreal steak seasoning)
1 teaspoon ground black pepper
2 cups shredded cheese (I use sharp cheddar)

Directions
1. In a large pot over medium heat, combine potatoes, carrot, celery, water and salt. 2. Bring to a boil, then reduce heat, cover and simmer until potatoes are tender, 15 to 20 minutes. Once tender, stir in milk.
3. In a small bowl, combine melted margarine, flour, steak seasoning and pepper. Stir into soup, increase heat to medium, and cook, stirring, until thick and bubbly.
4. Remove from heat and stir in cheese until melted. Let stand 5 to 10 minutes before serving.



I topped with cheese and a little Tastefully Simple Bacon Bacon. It refrigerates well and tastes great as leftovers too!

  1. Mmmmm, looks great! I love thick soups. I made chili tonight because it is so rainy and cold we needed something to warm us all the way through...and then some (ha!)

  2. I want some right this second. I am starving and it is almost midnight.

    So, I watched the Bachelor last night so I could comment educatedly. I wasn't impressed with the first girl he sent away. I saw him give the final rose and ask the next girl to marry him and then I turned it off and went to sleep. And then this morning on my way to work I hear ALL the stations talking about it. I didn't even see the drama. I felt so disillusioned....

    He cried a lot. I thought that was extremely strange. Hope you have the best day of school tomorrow : ).

    I make a mean split pea soup, boiling a honeybaked ham bone (with plenty of ham). Of course hear in TX I haven't seen a HBH place.

    I can't wait for your take on the Bachelor.

  5. This looks SO good. I always order potato cheese soups out but I don't make it at home because it's just too darn good and oh so bad.
